  • 200g whipping cream
  • 150g chocolate ganache
    • 100g dark chocolate
    • 50g heavy cream
  • 100g vanilla sponge cake
    • 50g all-purpose flour
    • 50g sugar
    • 2 tbsp yogurt
    • 1/4 tsp baking powder
    • 1/2 tsp vanilla extract
  • 150g chocolate mousse (made with water)
    • 100g dark chocolate
    • 50ml water

Prepare the Whipped Cream:

  • Whip the 200g of cream until soft peaks form. Set aside.

Prepare the Chocolate Ganache:

  • Melt 100g dark chocolate with 50g heavy cream using a double boiler. Stir until smooth and set aside to cool.

Prepare the Vanilla Sponge Cake:

  • Preheat the oven to 180°C (350°F).
  • Beat 2 tbsp yogurt and 50g sugar until well combined.
  • Sift together 50g flour and 1/4 tsp baking powder.
  • Fold the dry ingredients into the yogurt mixture.
  • Add 1/2 tsp vanilla extract and mix gently.
  • Pour the batter into a greased baking tin and bake for 10 minutes or until a toothpick comes out clean.
  • Let the cake cool and cut into small pieces.

Prepare the Chocolate Mousse (using water):

  • Melt 100g dark chocolate using a double boiler and let it cool slightly.
  • Boil 50ml water and let it cool slightly.
  • Gradually add the warm water to the melted chocolate, stirring continuously until smooth and thickened.

Assemble the Dessert:

  • Layer the bottom of the glass with a portion of the whipped cream.
  • Add a layer of chocolate ganache and top it with pieces of vanilla sponge cake.
  • Add another layer of chocolate ganache.
  • Add a second layer of whipped cream.
  • Top with a generous layer of chocolate mousse.
  • Garnish as desired.

Serve:

  • Chill the dessert in the refrigerator before serving.
