Ingredients

  • 1 cup mascarpone cheese, softened* (about 8 oz)
  • 1 cup plain Greek yogurt
  • 4 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 24 Biscoff cookies (about 8 per parfait)
  • 1 cup brewed coffee, divided
  • 3 Tbsp cookie butter (also known as Biscoff spread)

For topping

  • 1 Tbsp cocoa powder
  • 1 tsp espresso powder (optional)
  • 1 cup whipped cream (optional)

Instructions:

  • Brew a cup of coffee, check the package directions, and follow the steps. Save 2 tablespoons of coffee and keep it aside.
  • Take a medium size bowl, mix the maple syrup, vanilla extract, and softened mascarpone cheese until smooth. Now add the Greek yogurt and mix it until fluffy texture.
  • Dip 3 of the Biscoff cookies into the bowl of coffee until just submerged, then layer them over the mascarpone/yogurt mixture in each glass.
  • In a microwave-safe bowl or mug, microwave the 2 tablespoons of brewed coffee until hot (you kept it before). Stir in the Biscoff cookie butter spread until it fully mises; drizzle about 1-2 teaspoons of this mixture over the first layer of Biscoff cookies.
  • Break the remaining Biscoff cookies into pieces and dip them in the coffee. Layer them over the cookie butter/coffee mixture.
  • Add another layer of the mascarpone/yogurt mixture, followed by another layer of Biscoff cookies, cookie butter/coffee mixture, and more Biscoff cookies. Top each glass with a layer of whipped cream, if desired.
  • In a small bowl, mix the cocoa powder and espresso powder. Use a sifter to dust the mixture over the tops of the glasses.
  • Cover the parfait glasses with cling wrap and keep them in the refrigerator and allow them to chill for at least an hour before serving.

  • Gradually add the dry ingredients to the wet ingredients, mixing at a low speed until just combined. Don't overmix the dough.
  • Fold in the chocolate chips.
  • Use a spoon to portion out about 2 tablespoons of dough per cookie, placing them 2 inches apart on the prepared baking sheet.
  • Gently press down on the tops of the cookies with the palm of your hand.
  • Bake for approx. 8 to 10 minutes or until the cookies are no longer shiny on top. Don't overbake them, as they will set as they cool on the baking sheet.
  • Let the cookies cool for 5 minutes on the baking sheet, then transfer them to a wire rack to cool completely.

  • 1 and 3/4 cups (219g) all-purpose flour (spoon & levelled)
  • 3/4 cup (62g) unsweetened natural cocoa powder
  • 1 and 3/4 cups (350g) granulated sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons espresso powder (optional)
  • 1/2 cup (120ml) vegetable oil (or canola oil or melted coconut oil)
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (240ml) buttermilk, at room temperature
  • 1 cup (240ml) freshly brewed strong hot coffee (regular or decaf)
  • Chocolate Buttercream
  • 1.25 cups (2.5 sticks or 290g) of unsalted butter, softened to room temperature.
  • 3 and 1/2 cups (420g) confectioners' sugar
  • 3/4 cup (65g) unsweetened cocoa powder (natural or Dutch process)
  • 3–5 Tablespoons (45-75ml) heavy cream (or half-and-half or milk), at room temperature
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • optional for decoration: semi-sweet chocolate chips

Instructions:

  • Preheat the oven to 350°F (177°C). Grease the cake pans, line them with parchment paper rounds, then grease the parchment paper. This will help the cakes release easily from the pans.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, salt, and cocoa powder.
  • In a separate bowl, mix together the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Pour in the boiling water/ coffee and mix until smooth. The batter will be thin.
  • Fold in the semisweet and milk chocolate chips.
  • Divide the batter evenly between the prepared cake pans.
  • Bake for 20-25 minutes or until a toothpick inserted in the centre comes out clean.
  • Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  • Once the cakes are cooled, make the frosting. (Frosting can be made by beating butter and powdered sugar).
  • Assemble the cake and refrigerate for at least 30 minutes before slicing and serving. Enjoy!
