If you are just starting to use it, you should know everything you can about fondant so that you do not learn the hard way. - The brand matters: You will find many pre-made fondant brands and each offers a variety of textures, flavors, elasticities and colors. Different brands have different fondant ingredients. - You can refrigerate fondant: Have you heard of cake artists using humidity controlled refrigerators? If you have not found one for your use, do not worry. What you can do is try to keep your cake refrigerator at the warmest setting so you can minimize the difference between the air temp and the refrigerator temp, limiting the condensation amount that forms when you take your cake out of the fridge.

What you want to do is use the thinnest roll of fondant possible with having to sacrifice its elasticity. While you do not want your cake covered with a thick layer, you also do not want it so thin that it tears while working with it.
- You can make your fondant strong: Did you know that you can strengthen the fondant you have to work with if you need to? The trick is to add Tylose powder, which is a food-safe hardening agent, to soft and warm fondant. Take a golf ball-sized piece of fondant and knead about 1/2 a teaspoon of the powder and continue working. When you lay the items to dry, they will begin to harden within several hours and in a few days, they will completely harden. Just remember not to add the Tylose too soon or your fondant will harden and dry out, making it difficult to work with.
